What do you do when you want the specific flavour from a fruit that you can not find in North America + you want a small carbon footprint + affordable costs for your customers?

Getting inspired by the concept from Luigi Biasetto, member of Relais Desserts who designed a recipe made of natural ingredients for a vanilla flavour profile, Yann decided to find a natural way to have a wild strawberry flavour he always loved.
After brainstorming around memories & experiences from childhood and beyond, the recipe started to take form.
As seen in our Mother’s Day dessert of 2024.
After some trials and research we were able to obtain a flavour very close to the profile of wild strawberry by using diiferent fruit, berries & spice.
Who would have thought? It is so amazing how different natural elements combined together can remind us of our childhood memories!
