One of our most popular product in the shop is… our almond croissant!
The reason has to be behind the making of our delicious croissants.
Croissants are Melody's favorite treat at Yann's!
First, it takes around 36 hours, patience and love to create a plain croissant.

In a little nutshell, you must first make the dough, keep it chilled, incorporate butter a few times (but wait 1h in between folds), laminate, cut up the triangles, weigh them individually to ensure that they will all have the same amount of dough, roll them up, wait hours for them to proof and finally bake them for 15 minutes: the easy part!
Now that you have a beautiful croissant, it is time to cut it open, add a little syrup, fill it with a homemade almond cream and add a little on top for the look and bake it!
We are sometimes asked why the almond croissants are darker than our plain ones and the answer lays in the double baking required to create this treat.
It is labour intensive but so worth it, wouldn’t you agree?
